Pujol is the restaurant that put Mexico on the global culinary map. Chef Enrique Olvera opened Pujol in 2000 in Polanco, Mexico City, with the mission to reinterpret Mexican cuisine from its deepest roots. Today, the Pujol experience revolves around the Mole Madre — a mole that has been cooked for over 2,500 consecutive days, renewing itself daily but never starting from zero — and the Taco Omakase, a 9-course tasting of native corn tortillas prepared in front of the diner. In 2023 it ranked 13th on the World's 50 Best Restaurants list.
