Hartwood is the most influential restaurant in Tulum and one of Mexico's most original dining establishments. Chef Eric Werner cooks exclusively over wood fire in an open kitchen nestled within the jungle, using no gas or electricity. Everything is prepared over live coals and in clay ovens. The menu changes daily based on ingredients sourced from local farms, artisanal fishermen from the Caribbean Sea, and foragers from the Mayan jungle. Wait times can range from 2 to 3 hours, but dining under the stars at rustic tables surrounded by lush vegetation offers a truly unique experience found nowhere else in the world.
