Máximo Bistrot by chef Eduardo García is the most influential restaurant in Colonia Roma, opened in 2011 and a pioneer of the market-driven cooking movement in Mexico City. The menu changes daily based on ingredients from the market. The cuisine blends French technique (García studied at the CIA) with unpretentious Mexican ingredients. The intimate 40-seat dining room and the chef's personal touch make it one of the most personal restaurants in Mexico.
