El Tizoncito is considered the birthplace of the taco al pastor in Mexico. Opened in 1966 in the Condesa neighborhood, it was the first to adapt the Lebanese shawarma technique to pork marinated with achiote and pineapple. Today it has 27 branches throughout Mexico City, but the original location on Tamaulipas remains the favorite, with its distinctive spit visible from the street.
